InterContinental Tokyo Bay has launched two delightfully refreshing cocktails available for a limited time this summer. Located in the heart of Minato, Tokyo, The Shop N.Y. Lounge Boutique invites guests to savor unique summer-inspired vacherins: the enchanting lychee-based "Lychee Blossom" and the tropical "Caribbean Coco" cocktail.

Lychee Blossom


The "Lychee Blossom" is a twist on the popular cocktail "Red Moon," which incorporates the delicate and elegant flavors of DITA LYCHEE liqueur. This beautiful treat features layers of strawberry and muscat grape sauce, a smooth lychee panna cotta, and a lychee jelly enhanced with cherries and cranberries, offering a hint of tanginess. Notably, grapefruit hidden within the lychee jelly highlights the sweetness of the lychee, resulting in a vibrant and exotic flavor experience that's perfect for summer.

Caribbean Coco


On the tropical side, the "Caribbean Coco" presents a spectacular layered dessert made with a mango and passion fruit sauce, followed by fragrant coconut panna cotta made with Malibu rum. This treat features mixed tropical jelly combining pineapple, mango, and passion fruit, perfectly capturing the essence of a sunny getaway. A taste of this dish will evoke memories of summer’s favorite cocktail, "Piña Colada," as you enjoy the blissful layers from the whipped cream on top to the delicious sauce at the bottom of the glass.

About Executive Pastry Chef Shoya Nagai


Shoya Nagai, the Executive Pastry Chef, brings to life these delightful creations. He honed his skills for approximately seven years in the pastry kitchen at the Imperial Hotel, proposing several innovative products. After gaining experience as a consultant and lecturer at a culinary school, he moved to Canada to contribute to the establishment of Thierry Chocolates' second store and train staff.

In January 2022, he joined InterContinental Tokyo Bay as Deputy Pastry Chef, and in July 2023, he was appointed Deputy Head Pastry Chef at a five-star hotel in the USA. Starting in June 2024, he will assume the position of Executive Pastry Chef at InterContinental Tokyo Bay, where he continues to express his artistic philosophy on desserts, viewing them as unique works of art and encouraging creativity in a field that thrives on freedom.
