A Unique Twist on Classic Cocktails



The two standout creations are inspired by popular summer cocktails that have captured the hearts of many. The first, Peach Breeze, takes the beloved Mojito and elevates it with a blend of sweet peach and the refined essence of Earl Grey tea. This exquisite verrine is layered with vibrant peach sauce enhanced with raspberry accents, a fragrant Earl Grey panna cotta, and a luscious mojito-flavored jelly that encapsulates pieces of fresh peach. The pairing of the mojito's refreshing notes with the juicy sweetness of the peach creates a decadent dessert that is perfect for the summer season.

Peach Breeze



The second creation, Botanical Pine, is a modern twist on the celebrated Gin Basil Smash that is beloved in top bars around the world. This verrine features a citrusy sauce layered with the exquisite Maraschino liqueur, Luxardo, which is elegantly complemented by a velvety panna cotta infused with vanilla. About Executive Pastry Chef Shoya Nagai


Chef Shoya Nagai brings an extensive background, having spent nearly seven years developing innovative products at the Imperial Hotel's pastry kitchen. After establishing his consultancy and serving as a special lecturer at a culinary school, he moved to Canada to assist in launching the second location of Thierry Chocolates. In January 2022, he joined InterContinental Tokyo Bay as the interim pastry chef and is diligently refining the dessert offerings. As of July 2023, he took on the role of executive pastry chef at a 5-star hotel in the United States, focusing on menu design, production, and management. His philosophy views pastry-making as an art form, allowing personal expression and encouraging innovative thinking in the creation process.
