A Dive into Summer's Bounty

With July's theme focused on robust summer nutrition and artisan craftsmanship, this month’s special menu is designed to bring out the best of nature's gifts from the sea. Kyushu's mackerel, known for its exquisite fat content, and the freshness of live eel are complemented by seasonal summer vegetables. Every bite promises a refreshing taste of summer, particularly when enjoyed with chilled beer or local sake, enhancing the experience further.

Highlighted Ingredients and Craftsmanship

The Marvelous Kyushu Mackerel

While many think of mackerel in fall and winter, the Kyushu mackerel in July boasts remarkable quality and rich fat even in the summer heat. Our chefs skillfully remove bones while assessing the quality of the fish, ensuring the meat's flavor is refined and free from any strong odors typical of blue fish. With a focus on retaining the beautiful silver skin, we present the mackerel in three delightful styles: Goma Sabai, a unique rendition drizzled with a traditional sauce; Sashimi, allowing you to appreciate the pure flavors of the fish; and Nigiri, which melds the mackerel's richness with seasoned rice.

Freshly Prepared Live Eel

Our live eel is known for its delicate flavor, transformed by the chefs into light, crispy tempura. The cooking process involves frying it in a thin batter, paired with refreshing summer vegetables like eggplant and okra. Each tempura piece captures the natural moisture of the vegetables, resulting in a satisfying crunch and a burst of flavor with every bite.
