From July 1 to August 31, 2025, the Royal Park Hotel will host the
Hokkaido Culinary Fair, offering a unique dining experience in the 20th-floor teppanyaki restaurant,
Sumida. This special event invites guests to indulge in the exquisite flavors of Hokkaido, featuring top-notch ingredients like
Furano Wagyu, hairy crabs, scallops, and salmon.
A Feast for the Senses
The culinary journey begins with appetizers that tantalize taste buds. Guests will enjoy a luxurious dish topped with snow crab and sea urchin over consomme jelly, with the addition of a chilled soup made from locally sourced Hokkaido potatoes, merging rich seafood flavors with a gentle potato essence.
Next, guests will savor steamed hairy crab and scallops, delicately infused with the aroma of Hokkaido kombu and finished with a yuzu-scented sauce featuring roe, creating a delightful contrast of textures and flavors.
The highlight of the meal is a beautifully pan-seared Hokkaido salmon with a crispy skin complemented by a fragrant basil sauce that enhances the tender and flavorful fish.
The Star of the Show: Furano Wagyu
The main event features the crown jewel of Hokkaido's culinary treasure—the
Furano Wagyu steak. This unique beef, raised in the rich pastures of the Furano basin, is known for its melt-in-your-mouth texture and well-marbled fat. The chef masterfully prepares this steak, ensuring it is cooked to perfection and served alongside grilled seasonal vegetables, including the famous Northern Ruby potatoes from Hokkaido.
