Naohiko Noguchi, who became a toji at the young age of 28, is now 92 and continues to lead the charge in traditional sake brewing. With numerous gold awards from the National New Sake Competition, he is credited with reviving the much-admired yamahai brewing method. The Noguchi Sake Institute, located in Komatsu City, was established in a picturesque hilly area known for its pure water and ideal brewing environment. Despite its natural beauty, this location remains a hidden gem that sake enthusiasts dream of visiting – just a 30-minute drive from Komatsu Airport and 20 minutes from the nearest Komatsu Station.

Enjoy Tasting in a Serene Setting


At the Noguchi Sake Institute, you will find the tasting room called “Toan,” designed to resemble a traditional tea room. It features glass walls that provide stunning views of the changing seasons while you savor six distinct types of sake, including the Limited Edition, thought to be the pinnacle of Naohiko Noguchi’s craft. Each sake has its own unique characteristics, influenced by differences in rice varieties and brewing methods. This exquisite tasting experience is offered three times daily, with each session accommodating just eight guests, ensuring a personal and intimate setting.

To enhance the experience of staying at Yamanaka Onsen Kajikaso, guests will be welcomed with a complimentary drink featuring the institute's tantalizing sake upon arrival. In response to enthusiastic guest feedback, the hotel has curated this exclusive sake tasting program, ensuring that visitors not only enjoy the delicious varieties at the hotel shop but can also tour the Noguchi Sake Institute. Scheduled tastings will take place on Tuesdays and Fridays between December 2025 and March 2026 at 1 PM, with convenient transportation provided by hotel shuttles which take about 45 minutes to the institute.

Guests will be returned to Kaga Onsen Station or back to the hotel. This unique opportunity is perfect for those who are passionate about sake or eager to experience the local flavors of the region.
