Shangri-La Tokyo, situated in the heart of Marunouchi, is set to unveil an enticing new dining concept, 'Haru', starting March 3, 2026. The restaurant, Piacere, located on the 28th floor, aims to create a warm and welcoming atmosphere, reminiscent of family gatherings, showcasing the essence of spring through a series of innovative dishes.
The 'Haru' menu is inspired by traditional kaiseki cuisine, which emphasizes seasonal ingredients and elegant presentation. Each course features fresh, carefully selected ingredients by the chef, presenting a visually stunning and diverse array of options.
Amuse-Bouche
Guests will start their culinary journey with an assortment of delightful amuse-bouches, including homemade olive financiers, cheese pastries, and a creamy foie gras and porcini flan that pairs beautifully with champagne.
Appetizers
The appetizers draw upon the chef’s childhood memories, presenting a creative dish of carrots and squid. The dish features vibrant baby carrots topped with a tart orange puree and sprinkled with tataki-style squid, brilliantly capturing the colors and flavors of spring. Additionally, white asparagus is featured prominently, elegantly finished with a hot hollandaise sauce prepared table-side, adding a touch of theatrics to the experience.
