Tackling Food Waste and Promoting Food Education: A New Initiative by Tobu Top Tours
Tobu Top Tours Co., Ltd., headquartered in Sumida, Tokyo, has recently embarked on an innovative experiment aimed at bolstering regional revitalization and promoting food education. This initiative is part of their internal business contest, the Top Idea Stage (TOBU_FT_HUB), where selected ideas focus on addressing societal challenges and creating new value through open innovation.
In Japan, many vegetables are being discarded due to not meeting strict market standards, despite their flavor and quality being perfectly fine. At the same time, there's an urgent need to address food waste and utilize resources effectively due to increasing environmental awareness. This initiative spots the unrealized potential of these imperfect vegetables, with the goal of creating new food experiences for families and food-conscious consumers, which in turn promotes food education and revitalizes agricultural sectors nationwide.
The experimental project is anchored on two primary avenues: conducting family-oriented experiments to develop “experience kits,” and collaborating with restaurants to create menus featuring these imperfect vegetables. Activities will include family workshops centered around these vegetables, allowing children to learn how these misshapen veggies can be transformed into delicious dressings, alongside test marketing conducted with restaurant chefs. This approach will help assess demand and profitability while working towards a sustainable food cycle business model.
Event Overview: Family Food Education Lab
Event Name: Family Food Education Lab “Let’s Learn the Secrets of Vegetables and the Importance of Not Wasting!”
Content: This workshop will provide children an engaging learning experience about the unusual and irregularly shaped vegetables typically unseen in supermarkets, explaining in simple terms how they can be turned into delicious dressings. Participants will engage in making and tasting the dressings, while also participating in a taste comparison (no meals will be provided).
