Experience the Taste of Spring with Bella Vista

Experience the culinary transition to spring at Bella Vista, located on the 40th floor of Hotel New Otani in Tokyo. Starting March 10, 2026, this renowned Italian restaurant will unveil its delightful spring menu, highlighting white asparagus and sakura shrimp—two iconic flavors of the season.

Signature Dishes: A Taste Adventure

Chef Shintaro Saito, known for his excellence in French cuisine, has meticulously crafted dishes that celebrate spring’s bounty. As you savor your meal, enjoy signature offerings roasted with a blend of charcoal and wood fire in the renowned Jomon Grill. This technique draws upon primitive cooking methods to showcase ingredients in their purest form.

Fried White Asparagus with Savoy Sauce

One of the standout dishes is the Fried White Asparagus with Savoy Sauce priced at ¥3,500 (service charge not included). This dish features delicately cooked white asparagus from France, dressed in a rich cream sauce infused with morel mushrooms and the unique fragrance of vin jaune from the Jura region. The asparagus is lovingly prepared through slow confit in butter before being lightly battered and fried, making for a luxurious, textural delight.

Sakura Shrimp and Arugula Spaghettini

Also featured is the Sakura Shrimp and Arugula Spaghettini, also priced at ¥3,500 (service charge not included). This dish presents a harmonious combination of sautéed sakura shrimp to enhance their sweetness and crispy fried sakura shrimp, providing two delightful textures. Complemented by the refreshing flavor of olive oil and a sprinkling of arugula's slight bitterness, it is the perfect representation of spring’s vibrant flavors. For a special twist during dinner, diners can opt to enhance this dish with the addition of bottarga, adding a touch of elegance.

Sweet Temptations by Pierre Hermé

As spring blooms, guests can also treat themselves to a collection of exquisite desserts designed by Pierre Hermé, renowned for his patisserie excellence. The Pierre Hermé Paris and Patisserie SATSUKI Dessert Collection features an intricate assortment of six delightful sweets, with strawberries as the central theme, available as part of both lunch and dinner courses.

The Unique Experience of the Jomon Grill

The Jomon Grill remains the pinnacle of Bella Vista's dining experience, harmonizing the intense heat from charcoal with the aromatic qualities of wood fire. This unique grilling technique produces dishes that reflect the essence of origin in cooking, ensuring that every ingredient shines with its natural flavor. Dining here is not merely about the meal; it’s about connecting with the historical roots of culinary practices while enjoying panoramic views of Tokyo from 144 meters above.

Meet Chef Shintaro Saito

Chef Shintaro Saito honed his skills at the prestigious Tour d'Argent Tokyo, recognized as the only overseas branch of the famed Parisian restaurant. In 2025, he was appointed as the head chef of Bella Vista and has since captivated guests with his sophisticated creations, building on the restaurant's legacy and commitment to culinary exploration since its inception in 1964.
