ICSA 2026 Tokyo: A Culinary Journey around Tokyo, promises to bridge diverse culinary perspectives, ingredients, and cultural backgrounds in a unique collaboration.

On the day of the event, five pioneering chefs will present a specially crafted menu featuring a dish from each chef, showcasing their intercultural dialogues in cuisine. The chefs include:
- - Choi Hyun-seok from Seoul, known for his appearance on the Netflix series Black and White Spoon: Culinary Class Wars
- - Ryohei Haitani, the chef behind the Michelin two-star restaurant EIKA in Taipei
- - Park Eun-young from NUWA, Seoul
- - Raffaella de Vita from Gucci Osteria da Massimo Bottura Tokyo, and
- - Nao from Restaurant Julia, Tokyo.
Each chef will focus on one dish that encapsulates their culinary philosophy and cultural heritage, creating a five-course meal that intertwines various themes:
Flow, Earth, Harvest, Time, and Light. This thematic approach allows guests to savor an exquisite array of dishes ranging from cold and warm appetizers to pasta, main courses, and desserts, presented in a relay format.

The lunch menu is as follows:
- - Flow - Cold appetizer by Ryohei Haitani: Fig and ankou.
- - Earth - Warm appetizer by Park Eun-young: Abalone simmered with fermented beans essence.
- - Harvest - Pasta by Raffaella de Vita: Pumpkin, mushrooms, cream, parmesan, and black truffle.
- - Time - Main dish by Choi Hyun-seok: Three types of Korean sauces (ganjang, doenjang, gochujang).
- - Light - Dessert by Nao: Kyoho grapes.
