Asano-ya's Commitment to Reducing Food Waste
Asano-ya, a renowned bakery located in Karuizawa, Japan, is taking significant strides towards combating food waste with its latest creation. Launching on July 10, 2026, their new upcycled beer, 'Bread Weizen', is a collaboration with the esteemed Beeren Brewery based in Morioka, Iwate Prefecture. This beer is crafted using trimmings from baguettes that would otherwise be discarded.
The Second Phase of Upcycling
This initiative follows the positive reception of a similar upcycled beer project launched in 2025. The production of baguettes involves creating leftover trimmings that Asano-ya decided to repurpose rather than waste. By transforming these “still valuable materials” into a refreshing beverage, Asano-ya aims to strike a balance between reducing food waste and delivering a delightful taste experience.
Unique Brewing Process
The 'Bread Weizen' is brewed using traditional German techniques, ensuring that the unique flavors from the bakery's baguette trimmings are fully realized. The beer is based on a hazy, unfiltered wheat beer enriched with generous portions of wheat malt, which draws out the enticing aromas and flavors of the baked bread. The combination of fruity aromas from the yeast and the toasty notes reminiscent of bread just out of the oven creates a refreshing drink perfect for summer enjoyment.
Launch Event to Celebrate 'Bread Weizen'
In conjunction with the launch of 'Bread Weizen', Asano-ya will host an exclusive event on July 9, 2026, at their Jiyugaoka location. This event offers attendees the chance to taste the new beer and savor special pairing foods designed to complement its flavors. The event will feature gourmet long pizzas crafted by skilled pizzaiolos and tapas made with baguette trimmings.
