Daito Corporation: Leading the Way in Culinary Diversity and Global Presence

Daito Corporation: A Leader in Japanese Culinary Culture

Daito Corporation, headquartered in Chiyoda, Tokyo, has established a strong presence in the gastronomy landscape of Ginza. The company operates various Japanese dining brands, including 'Kita-Oji' and 'Touzan'. In line with their mission to promote Japanese culinary culture globally, Daito is dedicated to fostering a diverse workforce. This initiative is reflected in the company’s commitment to promoting foreign employees into management roles.

Founded in 1927, as the company approaches its centennial in 2027, it aims to expand its operations both domestically and internationally. The company’s philosophy is anchored in its mission: to share the art of Japanese cuisine and provide fun experiences for the community. This mission underscores Daito's focus on not just delivering exceptional food but also celebrating the culture behind it.

Global Talent Development

A key feature of Daito's corporate strategy is its investment in human resource development. Since 2022, the company has offered an 'Itamae Open School', where individuals can work and learn simultaneously. This initiative aims to cultivate the next generation of global culinary talents capable of thriving in diverse workplaces. Moreover, the company emphasizes equal career paths for foreign staff, facilitating their progression into senior positions within the organization.

Currently, Daito employs 88 Japanese staff members alongside 6 foreign managerial positions. The company has successfully opened its first international location, 'Kita-Oji Bangkok,' in Thailand in 2015, which has allowed it to expand opportunities for employees from different backgrounds. The presence of foreign managers is particularly significant as it drives the company’s overseas expansion strategy.

A Success Story: Chef Tan Jin

One notable example of this growth is Chef Tan Jin, who holds the position of deputy chef at 'GINZA SUSHI BANYA KAI'. Originally from Myanmar, Chef Tan developed a passion for Japanese cuisine, eventually aspiring to open a Japanese restaurant in his home country.

After joining Daito in 2011 as a part-timer at 29, he recognized the company's dedication to providing opportunities for foreign staff. Unlike previous experiences in different workplaces, Daito offered a supportive environment where talent is nurtured based on merit. Through hard work, he climbed the ranks, becoming a full-time employee and later a supervisor. On June 2024, Tan Jin will officially take on the role of deputy chef at 'GINZA SUSHI BANYA KAI'.

Tan appreciates the trust placed in him by both his company and colleagues. He finds immense satisfaction in the excitement expressed by customers who enjoy his dishes. The recognition he receives has motivated him to further aspire to the title of head chef. As a deputy chef, his responsibilities have expanded to include overseeing orders and managing kitchen operations, further employing a mentorship approach with his colleagues, including others from Myanmar.

Tan’s commitment to sharing his knowledge of Japanese cuisine is evident in his coaching methods, tailored to accommodate the diverse backgrounds of the employees at 'GINZA SUSHI BANYA KAI', which includes staff from Italy and Mongolia. This diversity is fundamental to Daito’s vision, as nurturing talent based on ability rather than nationality is perceived as a powerful driver for their domestic and international growth.

The Future of Daito Corporation

Daito Corporation is determined to maintain its trajectory of growth and adaptability. They continue to embrace diverse talent not only as a means of enhancing their culinary offerings but also as a way to ensure the future prosperity of Japanese culinary culture on the global stage. With upcoming plans to open more international locations by June 2025, the company remains committed to its mission of sharing the delightful experiences of Japanese cuisine with the world.
