1. Amuse-Bouche: Raspberry-scented Mutabbal with ras el hanout crumble
2. Appetizer: Grilled squid with cauliflower mousse and cumin foam, accompanied by squid ink beurre noisette
3. Soup/Appetizer: Sengan kabocha pumpkin and apple soup with a Calvados accent, foie gras terrine, and duck ham with oriental pain d'épices
4. Fish Course: Natural flatfish choucroute with caviar butter Champagne sauce
5. Meat Course: Momentarily smoked Mikawa Wagyu fillet with Mikawa mirin in red wine, served with fried white maitake mushrooms and caramelized pearl onions
