Marugen Ramen has a well-established reputation for its signature dish, the “Aged Soy Sauce Ramen with Meat Soba,” made with custom high-hydration noodles paired with a rich pork stock. The restaurant uses a blend of three types of soy sauce for the perfect flavor balance.
