Bon Salut Cafe Earns Recognition as Tokyo Special Ingredient Restaurant

Bon Salut Cafe Achieves Recognition for Utilizing Local Ingredients

Hotel Gracery Tamachi, located in Minato, Tokyo, is proud to announce that its flagship restaurant, Bon Salut Cafe, has been officially registered as a "Tokyo Special Ingredient Restaurant" by the Tokyo Metropolitan Government. This recognition comes as a result of the cafe's persistent commitment to using locally-sourced produce to ensure the safe and quality provision of food, aligning with the city's initiative to promote the consumption of local ingredients.

The official registration took place in October 2025, which subsequently led to Bon Salut Cafe being featured in the latest edition of the guidebook titled "Let’s Eat Tokyo - 2026 Edition* on February 27, 2026. This guidebook is published by the Tokyo Metropolitan Government to highlight restaurants that actively incorporate Tokyo-produced agricultural, forestry, and fishery products into their menus.

Bon Salut Cafe has long been dedicated to preserving regional food culture and encouraging local consumption through its offerings of fresh ingredients sourced from within Tokyo. By utilizing seasonal vegetables and specialty products like the “Kawanabe chicken eggs” from Ome City, the cafe provides a colorful breakfast buffet featuring over 40 different dishes, allowing guests to enjoy the vibrant flavors and nutritional benefits of Tokyo’s produce. Visitors can expect a rich array of dishes ranging from vibrant salads overflowing with local vegetables to perfectly cooked fried eggs.

As the cafe continues to innovate, the culinary team remains committed to enhancing the essence of each local ingredient while presenting thoughtful, homemade meals. The seasonal variations of the dishes ensure that guests experience the best that Tokyo has to offer, reflecting the chef's passion for providing a warm and welcoming dining experience. Customers are encouraged to take their time and savor the flavors in a setting designed for a leisurely start to the day, encapsulated by the motto of “A Breakfast That Makes You Want to Wake Up Early” at Hotel Gracery Tamachi.

Embracing Local Produce in Every Meal

The Tokyo Special Ingredient Restaurant registration system is designed to promote the use of locally-sourced agricultural products in Tokyo’s dining establishments. This initiative is managed by the Tokyo Metropolitan Bureau of Industrial and Labor Affairs and aims to foster a stronger connection between residents, visitors, and the bounty of Tokyo’s regional produce. The promotional efforts are centered on creating a sustainable food ecosystem in the city, thereby supporting local farmers and suppliers.

Located conveniently on the first floor of Hotel Gracery Tamachi, Bon Salut Cafe opens daily for breakfast from 7:00 AM to 10:00 AM, with the last entry at 9:45 AM. The cafe caters not only to the hotel guests but also to outside visitors, offering an incredible culinary experience for a nominal fee of 1,980 yen for hotel patrons and 2,600 yen for non-residents.
