Crafting Dreams: The Gelato Workshop
Recently, a unique workshop focused on gelato-making took place, bridging children’s imagination with professional expertise. Organized by FMI in collaboration with the renowned gelato shop GELATERIA SANTi, this event allowed children to get hands-on experience in creating gelato while learning about both traditional and cutting-edge techniques.
The workshop's primary objective was to teach the importance of quality ingredients while highlighting how different preparation methods can alter the taste and texture of gelato. To achieve this, participants embarked on creating ‘the world’s oldest gelato’ without using a freezer; only milk, egg yolks, and sugar were used alongside ice and salt to chill the mixture. This method offered the young participants a tangible lesson on the science behind dessert-making and piqued their curiosity about the gelato-making process.
The session was led by esteemed gelato chefs, Aiko and Jun Matsumoto, who are pivotal figures in Japan's craft gelato scene. Aiko, recognized as one of the world's top gelato chefs, along with her husband Jun, has established SANTi as a leader in utilizing local and organic ingredients in unique gelato flavors. With stores across Kamakura, Izu, and Oiso, they continue to bring forward flavors that truly represent their locality.
As part of the workshop, participants formed teams to craft their custard gelato. Engaging enthusiastically, they learned about the variables affecting freezing and even discussed why gelato solidifies. This hands-on experience shed light on how gelato is fundamentally intertwined with the science of food.
Next, participants had the opportunity to taste gelato made using FMI's advanced machinery. The contrasting textures and flavors of both the traditional and machine-made gelato inspired discussions about modern culinary advancements and how they affect our everyday eating culture. This experience aimed to foster a deeper understanding of food among the children while encouraging them to think critically about their eating habits.
Then came the exciting part – each child used an original flavor creation sheet to sketch and brainstorm their dream gelato flavor. The enthusiasm and creativity displayed were remarkable, as the children interacted with the professional chefs, gaining valuable insights into the world of gelato.
The culminating event of this initiative will be the GELATO COLLECTION 2026, scheduled for October 2026. This festival will showcase the best ideas from the workshop, realized into actual recipes by SANTi, allowing the children's imaginative flavors to be tasted by all. The workshop is more than just a single-day event; it's a step towards a future where children’s creativity can become a part of the culinary cultural narrative.
