Harnessing Unused Fish Varieties: Oisix's New Stadium Gourmet Initiative

Innovative Use of Underutilized Fish in New Stadium Gourmet

As we observe World Oceans Day on June 8, Oisix, a prominent food subscription service based in Tokyo, has announced a commendable initiative aimed at reducing food waste and enhancing local cuisine. In partnership with the Oisix Niigata Albirex Baseball Club, the company is launching a new gourmet item called "Gataho Ball". This item features the underutilized fish species known as Eso, a fish whose catch has increased due to global warming, making it a timely creation that is both sustainable and delicious.

The Rise of Eso

Eso, a fish traditionally regarded as high quality in Western Japan, has a flavorful profile and chewy texture. Historically, it has been a rarely caught fish in Niigata, but climate change has enhanced its presence in local waters. Eso is often captured alongside more sought-after fish like sea bream and black throat sea perch but had been neglected due to its bony composition, which made it unsuitable for typical household meals. Consequently, a significant amount of this fish has gone to waste.

Recognizing the potential of Eso, Oisix has teamed up with Bio Girl, a local company that engages in collaborative upcycling projects in Niigata City. Together, they have developed a unique recipe for Gataho Ball, enlisting the assistance of Niigata Apatite, a company dedicated to providing employment opportunities for people with disabilities. This collaboration not only creates a delicious new food item but also boosts employment in the region, emphasizing social responsibility.

Celebrating Local Flavor with Gataho Ball

The name “Gataho” is a playful nod to the chanting culture of baseball fans in Japan, where each team has its own unique cheer. The Gataho Ball is an exciting new addition to the menu, aiming to become a staple at games. With its vibrant presentation and delightful taste, Oisix’s latest offering is designed to appeal to fans of all ages.

As part of their commitment to championing local produce, Oisix Niigata Albirex Baseball Club aspires to be touted as the most delicious baseball team in Japan. They have been actively working on utilizing Niigata’s agricultural products, enhancing player nutrition, and exploring innovative menu options. Oisix's presence as a major sponsor reinforces their mission to tackle food-related societal issues through thoughtful business practices.

A Sustainable Vision for the Future

The collaboration emphasizes a responsible approach to food sourcing and preparation. Oisix has also been addressing urgent food waste concerns by creating meal kits that utilize imperfect vegetables and snacks made from underutilized ingredients.

The Gataho Ball project perfectly aligns with these environmental goals, showcasing a model where no local ingredient goes to waste. Another exciting product, using imperfectly shaped European pears known as “Le Lectier,” is set to be introduced as shaved ice, available from June 20. This allows visitors to taste distinctive local flavors while simultaneously raising awareness about Niigata's agricultural wealth.
