This limited-time package allows guests to taste a curated selection of eight Japanese wines at no additional cost, alongside exquisite French cuisine prepared with seasonal ingredients from the Shinshu region.
A Unique Tasting Experience
The term "Dégustation Libre" means "free tasting" in French, and this exclusive offering enables you to explore a variety of wines without restrictions. Available at the standard price of a two-meal accommodation package, guests are treated to eight distinct Japanese wines during dinner. Carefully selected by our wine concierge, Hiroyuki Yoshida, these wines include popular and hard-to-find labels sourced from renowned wineries across Japan, such as Kido Winery in Nagano and Domaine Keros in Yamagata.
Exceptional Wine Selection
Our hotel's unique offering stands out due to its selection of rare wines that are notoriously difficult to acquire. Each evening, a limited number of exquisite bottles are available for tasting, creating an exciting opportunity to discover new favorites. The experience is designed to be both educational and engaging, allowing guests to delve deep into the aromas and flavors of each wine.
In addition, a special wine, "Cuvée Yoshida," crafted by our wine concierge himself, will make a limited appearance during this tasting. This white wine, made from early-harvest grapes without the use of oak barrels, boasts a refreshing and vibrant taste, making it an excellent accompaniment to dinner.

One of the highlights of the Dégustation Libre experience is the pairing with a French full-course dinner. Chef Yamato Imanishi curates a menu that showcases the bounty of autumn in Shinshu, featuring dishes made from local mushrooms, root vegetables, river fish, and game. Each dish is thoughtfully crafted to accentuate the flavors of the season, ensuring that the dining experience encapsulates the essence of the region.
