The Story Behind Tabane no Shi
Tabane no Shi stands out in the competitive food landscape not just for its delicious crepes, but also for its dedication to quality ingredients. The matcha used in their crepes comes from the renowned Kakegawa region in Shizuoka, which is celebrated for producing award-winning tea. The unique blend used in their crepes maximizes the rich umami flavor and fragrance of the matcha, taking the tasting experience to new heights.
Furthermore, each crepe is adorned with a traditional mizuhiki (water-drawing) crafted by skilled artisans. This mizuhiki, lovingly placed on the wrappers, adds a decorative touch and can even serve as a bookmark or decor in the home after the delectable crepe is enjoyed.
In 2022, the first store of Tabane no Shi opened in Asakusa, and since then, the brand has expanded across major regions in Japan, such as Tokyo, Kanagawa, Chiba, Kyoto, Osaka, Hyogo, Shimane, Fukuoka, and Kagoshima. The name 'Tabane no Shi' reflects a meaningful connection, symbolizing the bonds and shared happiness between people.
