JA Town Launches Reservation for Exceptional Tanba Black Edamame This Fall

JA Town Introduces Reservation for Tanba Black Edamame

The online shop 'Atume te Hyogo,' operated by JA Zen-Noh Hyogo, has kicked off its reservation sales for a seasonal delicacy, the "Tanba Black Edamame," starting August 26, 2026. Located in the historical region of Tanba Sasayama City, Hyogo Prefecture, known as the birthplace of Tanba black soybeans, this area has a rich legacy of over 300 years in cultivating these unique beans. In 2021, the cultivation methods of Tanba black soybeans were recognized as part of Japan's Agricultural Heritage.

These edamame are characterized by their large size and rich flavor profile, offering a unique sweetness that becomes more pronounced as they mature. It is particularly notable that the color of the pods gradually transitions to yellow as they reach full ripeness, enhancing their flavor. However, the window to enjoy this delicacy is quite limited, making it a sought-after treat in the fall season.

Characteristics of Tanba Black Edamame

1. Young Edamame: Tanba Black Edamame consists of immature green pods of the Tanba black soybean before they mature into black beans.
2. Unique Surface Features: Due to the variety's characteristics, the pod surface may have fine hairs, and discoloration may appear. However, this does not affect quality.
3. Color of the Skin: The thin skin may also have a dark tint, which is a specific trait of Tanba black edamame, especially prominent as it approaches late October.

Cooking Recommendations

To prepare Tanba black edamame:
1. Wash the edamame and sprinkle with salt, rubbing to remove any fine hairs (using a mortar can be helpful).
2. Boil about 500g of edamame in 2 liters of water with 80g of salt until tender.
3. Once cooked, cool in cold water and drain.

Cooking Tips

For an enhanced taste, trim about 5mm from both ends of the soft-cooked pods, place them in a pot, and lightly sauté with a tablespoon of mirin and a pinch of salt. This adds a delightful flavor when served!
