Experience Summer Elegance with the Layered Parfait
This summer, the luxurious Mezurumu Tokyo, part of the Autograph Collection, unveils a unique culinary delight, the "Layered Parfait" featuring the classic ensemble of ham and melon. Available exclusively from July 1 to September 30, 2026, at the 16th floor bar and lounge, Whisk, this parfait captures the essence of an elegant afternoon in Rome.
The Layered Parfait evolves with the seasons, each rendition inspired by vibrant themes and culinary trends. This creation draws inspiration from the sophisticated food culture that blossomed in Rome since the 1960s, as well as the tradition of enjoying an aperitivo before dinner. Despite its classification as a dessert, the parfait is designed to be enjoyed as a meal, adding a refreshing yet substantial choice to your dining options.
At the core of this summer delicacy are the sweet, juicy fresh melon and savory, flavorful ham. The parfait is layered with mascarpone, yogurt, pistachios, tomatoes, basil, and lime, creating a delightful combination of light textures and rich flavors. A refreshing melon jelly and chunks of ripe fruit provide a sweet counterbalance to the creamy mascarpone mousse, which is topped with a velvety pistachio ganache, ensuring a decadent experience that gently satisfies the palate.
Accompanying the parfait are layers of fruit tomato jelly, yogurt mousse, and crumbled grissini, harmonizing flavors of sweetness, saltiness, acidity, and nuttiness. At the bottom of the glass lie refreshing lime and basil jelly, offering a surprise of vibrant aromas that evolve with each bite, ensuring a multifaceted tasting experience. Finally, the parfait is beautifully garnished with ham arranged like rose petals, evoking the charm of a Roman afternoon. Meanwhile, basil leaves and specks of olive oil add aromatic depth, allowing each spoonful to present a new surprise.
Guests are invited to enjoy the exclusive layered parfait against the backdrop of Hama-Rikyu Gardens and Tokyo Bay from the Whisk lounge. Here, you can indulge in a serene afternoon while savoring this unique summer treat.

The classic pairing of ham and melon has roots in ancient Roman dietary practices, where the cooling moist nature of melons was complemented by the salty flavor of ham. This combination appears in Italian culinary texts as far back as the late 19th century and has since evolved into a widely cherished summer appetizer.
