Anabuki joined Fujishima Group in 2023 with zero background in the culinary industry, yet he quickly set his sights on establishing himself in his home prefecture of Kagawa. From the outset, his ambition was clear: complete his training and return to start his own Yaki-ton venture. Over three years, Anabuki relentlessly honed his skills, achieving dual meister qualifications in both skewer preparation and grilling techniques. As a store manager, he took on responsibilities not only for maintaining quality but also for mentoring his juniors.
This August, he will graduate from the Fujishima Group, marking him as their first former trainee to attain independence within a mere three months of completing the meister program initiated in June 2026.
Embracing a Culinary Challenge
Anabuki has chosen Kagawa, predominantly known for its udon noodle culture, to establish his business in a field that remains largely untapped. He recognized the void for specialized Yaki-ton and motoyaki (grilled offal) shops in the region. With the techniques and experiences acquired at Fujishima Group, he aims to introduce a new wave of Yaki-ton culture to Kagawa, bridging the gap between traditional flavors and modern tastes.
