Torisora to Relaunch as Okonomi: A New Era for Yakitori Culture
Torisora, a distinguished yakitori brand, is set to undergo a significant transformation on April 15, 2026. Known for its exquisite yakitori and celebrated under the umbrella of LDH Kitchen, Torisora will shift its concept from "OMAKASE" to "OKONOMI," embracing a more customer-oriented approach to yakitori dining.
The invigorating change reflects a return to the roots of yakitori culture, allowing patrons to select exactly what they desire from an a-la-carte menu. This evolution emphasizes the authentic essence of yakitori as it originated in bustling street stalls, where diners could indulge in exactly what they craved, at their own pace.
A New Name with a New Philosophy
With this relaunch, the restaurant's name has been updated from "とりそら" to "鳥そら". The inclusion of the kanji character for birds symbolizes a deep respect for the ingredients and the commitment of the chefs who painstakingly craft each skewer. This name change reinforces the establishment's dedication to honoring the culture and craft of yakitori as it steps into the future.
A Culinary Experience Rooted in Choice
The newly branded Torisora will feature an a-la-carte menu, centered around the concept of "OKONOMI," which empowers guests to choose their favorite styles of yakitori and additional dishes. Each skewer is grilled to perfection with the renowned technique of "近火の強火" (grilled with strong heat), celebrated for preserving the juicy flavors and providing a beautifully charred exterior.
Diners can expect a range of flavors to choose from, accompanied by a variety of carefully selected fine sakes, enhancing the culinary experience. The goal is to ensure that everyone feels free to enjoy a true reflection of their own preferences in each bite.
An Inviting Atmosphere for Unforgettable Moments
The restaurant space will feature a cozy layout with ten counter seats, designed for an intimate and immersive dining experience where guests can witness the grilling action up close. The sizzling sounds of the charcoal, the wafting aromas, and the vibrant ambiance create an exciting atmosphere where guests feel a sense of anticipation and discovery with each skewer they select.
This warm and welcoming environment invites diners to share the experience with friends or loved ones, fostering memorable moments over delicious yakitori.
