Starting from March 1, 2026, Nasu Onsen Morishun no Kago, managed by Core Global Management, will unveil its new spring dinner course that embodies the vibrant essence of the Nasu region in every bite. Nested in the heart of Tochigi Prefecture, guests can immerse themselves in a culinary journey that showcases the best seasonal produce sourced from across Japan combined with local ingredients unique to Nasu.
The new dinner course is a celebration of spring's bounty, incorporating delicacies such as fuki (butterbur), taranome (Japanese angelica tree sprouts), sakura masu (cherry salmon), and hotaru ika (firefly squid). This exquisite menu reflects the skillful merging of traditional Japanese techniques with innovative flavors, offering diners a chance to relish the transient beauty of the spring season on a plate.
Among the highlights of the menu are the thoughtfully crafted appetizers featuring fresh ingredients like fuki, taranome, and sakura masu, alongside a delightful pairing of shrimp, squid, and crab. Guests can also enjoy a unique soup that features asparagus, further enhancing the meal with fresh and seasonal flavors.
For the main course, fish lovers will be treated to saury with white miso, while meat enthusiasts can savor beef prepared with hatcho miso.
