The original 'Kanazawa Noko Chuka Soba Shinsen' established itself in Kanazawa, Ishikawa Prefecture, in 2003. It rapidly gained fame as a must-visit ramen spot, particularly for its standout bowl, the 'Noko Tonkotsu Shoyu Ajitama Chuka Soba.' This dish features a rich broth made from Noto-sourced pork bones, simmered for three full days to extract maximum flavor. It is then paired with specialty thin straight noodles that complement the broth perfectly—creating a nostalgic taste beloved not just by locals but also by ramen enthusiasts nationwide.
