On November 18, 2025, Yoshinoya Holdings' subsidiary Zenryoku no Moto will debut 'Kanazawa Noko Chuka Soba Shinsen Kurashiki Honkan' in Kurashiki, Okayama. This location marks the second restaurant for the beloved ramen chain and stands out as the brand's first franchise in the Chugoku region. Known for its long lines and exceptional taste, the Kanazawa-based ramen shop will finally offer its signature flavors to the people of Kurashiki.

The original 'Kanazawa Noko Chuka Soba Shinsen' established itself in Kanazawa, Ishikawa Prefecture, in 2003. It rapidly gained fame as a must-visit ramen spot, particularly for its standout bowl, the 'Noko Tonkotsu Shoyu Ajitama Chuka Soba.' This dish features a rich broth made from Noto-sourced pork bones, simmered for three full days to extract maximum flavor. It is then paired with specialty thin straight noodles that complement the broth perfectly—creating a nostalgic taste beloved not just by locals but also by ramen enthusiasts nationwide. In addition to this signature dish, the 'Shinsen' brand has expanded its offerings with the 'Kanazawa Miso Ramen Shinsen,' utilizing traditional Kaga miso, and now operates three direct stores in Toyama and Tokyo.
