Empowering Chefs Through Education



A new venture has been launched in Takamatsu City, Kagawa Prefecture, aiming to elevate the culinary profession. TaniCo, a leading manufacturer of commercial kitchen equipment, has inaugurated a learning hub named "Fantudio Village School" within the commercial facility, Kawatamachi FLAG. This initiative is designed specifically for chefs and culinary apprentices looking to enhance their skills and knowledge in the industry.

Focus on the Future of the Food Industry



The Fantudio Village School has set three core objectives:

1. Transforming Chefs into Strong Entrepreneurs: By learning from the best in the industry, participating chefs will gain not only cooking techniques but also the entrepreneurial mindset necessary to run a successful restaurant.

2. Creating a Collaborative Community: The school aspires to foster a community where peers can share restaurant management challenges, collaborate, and support each other in overcoming these obstacles.

3. Connecting with Local Food Culture: A key goal is to integrate local culinary traditions into the training, ensuring that the rich food culture of the region is preserved and passed down to future generations.

Through regular offerings, Fantudio aims to support the growth of culinary professionals and build a strong network within the regional food industry.

Course Structure



Participants can expect a mix of lectures, hands-on cooking demonstrations, and tastings. Instructors will share their personal experiences, beliefs, culinary skills, and management philosophies with attendees.

  • - Noriko Nakagawa at Sushi Nakagawa (Takamatsu City): Will lead sessions on August 31, sharing insights on sushi making and pairing it with local sake.
  • - Takaharu Mitsuhata at Ushiharu (Kurashiki City, Okayama): Conducting a workshop on September 30, focusing on local fish dishes and their cultural significance.
  • - Keisuke Nishimori at Maruni Hakubai (Kyoto City): A graduate of prestigious establishments who will conduct a session on October 19.
  • - Ryohei Hayashi at Tenoshima (Minato City, Tokyo): An accomplished chef with multiple Michelin stars, he will impart his knowledge on November 2.
