Introducing 'Chiba Ozen' at Japanese Restaurant WA
From March 9, 2025, the Japanese Restaurant WA, located within MUJI HOTEL GINZA, will begin offering a delicious new dining experience called 'Chiba Ozen.' This unique menu showcases a variety of ingredients sourced primarily from the southern Boso region of Chiba Prefecture, highlighting the rich flavors of this area in Japan.
Japanese Restaurant WA is a warm establishment where skilled chefs prepare meticulously crafted dishes using locally-grown ingredients, catering not only to hotel guests but also to local visitors. If you're out shopping in the Ginza district, especially at the nearby MUJI store, this is a perfect spot to enjoy a delightful meal.
WA Discover Food Initiative
The 'Chiba Ozen' is part of a broader initiative called 'WA Discover Food,' launched to celebrate Japan's diverse regional cuisines. Since its inception in the fall of 2025, this initiative has featured various themed menus based on fresh ingredients carefully selected by chefs from different parts of Japan. Previous offerings included 'Kochi Ozen,' featuring fresh sashimi and local citrus from Kochi, and 'Fukushima Ozen,' which highlighted GAP-certified poultry and vegetables from Fukushima.
The 'Chiba Ozen' will round out this exciting series, allowing guests to experience the exquisite and abundant local produce that Chiba has to offer.
Highlighting Chiba Ozen’s Unique Dishes
Seasonal Sashimi from Boso
One of the standout features of the 'Chiba Ozen' is a daily selection of local sashimi from the Boso Peninsula, where fishermen bring in a wide variety of fish from the unique coastal environments of both the rough Outer Boso and the calmer Inner Boso. The chefs focus on enhancing the natural flavors of the fresh fish by preparing each type according to its specific qualities, ensuring a remarkable dining experience.
Fried Chiba Horse Mackerel
Chiba’s horse mackerel is known for its exceptional quality, making it a beloved choice in the southern Boso area. The fish is freshly caught and expertly coated in panko before being fried to create a crispy, tender delight. Served alongside homemade tartar sauce infused with seaweed and a colorful assortment of fresh vegetables from Tateyama Kao's garden, this dish brings out the best of local flavors.
Satomi Fushihime Beef Roast
This dish features the renowned Satomi Fushihime beef, prized for its fine texture and tenderness. The chefs prepare the beef with rich barley miso sauce, skillfully marinated for depth of flavor with both leaf and bulb onions, maintaining the ingredient's natural juiciness as an accent to this tender roast.
Anno Sweet Potato and Mushroom Chawanmushi
A standout side dish is the chawanmushi, featuring steamed Anno sweet potatoes and beautifully prepared mushrooms in a sweet and rich kuromitsu sauce. These mushrooms come from the Takagane farm in Asahi City, where they are cultivated using traditional methods and homemade compost, adding to the unique flavor profile of this delightful dish.
Sato Shoten’s Banana Monaka
As for dessert, the 'Chiba Ozen' features a beautifully crafted monaka made with bananas from Sato Shoten, a venerable shop in Tateyama specializing in bananas for over 90 years. The dessert combines ripe, caramelized Ecuadorian bananas with walnuts and smooth white bean paste, offering a delicious mix of sweet and nutty flavors.
