UNI1 Grand Prix 2026: A Culinary Challenge for Sea Urchins in Tokyo



Introduction
The UNI1 Grand Prix, organized by Itabashi Togetoge Corporation, is gearing up for its 2026 final event, set to take place on September 8, 2026, at the Sushi Choushimaru Itabashi Higashishinmachi branch. This unique competition brings together college students who have spent the last three months enhancing the taste of sea urchins (uni) through innovative feeding strategies. With the motto “What kind of feed will produce delicious sea urchins?” students are actively engaged in hands-on research to evaluate the impact of different diets on the flavor and texture of their cultivated sea urchins.

The Challenge of Tokyo's Landlocked Location


Despite being located in a landlocked area of Tokyo, where traditional sea farming isn't feasible, Itabashi is challenging the norm with the UNI1 Grand Prix. Students from four universities are forming three teams that will creatively develop their own feeds and monitor their sea urchins' growth over the course of the contest. Using various dietary approaches, they aim to explore how changes in feed can influence not just flavor but also color and texture. This project is a brilliant intersection of culinary art and scientific inquiry, allowing students to act as both researchers and innovators in a field that is ripe for development.

Key Features of the Competition


The UNI1 Grand Prix 2026 will spotlight a variety of aspects:
1. Judging Panel: Consisting of five distinguished judges from public policy, academia, and business sectors, the panel will evaluate the entries beyond just taste. They will assess the prospective market value, branding concepts, and target audience for each product, adopting a holistic approach to brand assessment.
2. Evaluation Criteria: Each entry will be judged based on taste, aroma, appearance, and texture, as well as the overall brand message it conveys. The judges will focus on how well each brand's concept resonates with potential consumers, ensuring that the competition is not solely centered on flavor.
3. Public Participation: Starting from August 9, public voting via Instagram will open, allowing a wider audience to weigh in on their favorite sea urchins based on captivating presentation videos made by the student teams.

The Event Format

The final decision will derive from a two-part scoring system combining:
  • - On-site Judging (50 points): Judges will taste and assess each sea urchin, considering its flavor, visual appeal, and the effectiveness of the brand's narrative.
  • - Social Media Engagement (50 points): Each team’s online exposure—including likes, shares, and viewer interaction metrics—will factor into their final score, emphasizing the importance of digital presence in today’s market.
