In collaboration with Chef Louis Han from Singapore's contemporary Korean restaurant NAE:UM, diners can enjoy a unique dinner titled "Harvest and Memory: A Culinary Dialogue with NAE:UM". This exclusive two-day experience promises to blend the exquisite and delicate flavors of NAE:UM with the simple yet profound essence of ARVA's cuisine, intertwined under the themes of "Harvest" and "Memory".

NAE:UM is renowned for its innovative approach to Korean cuisine, melding modern Western cooking techniques with traditional Korean flavors. The dishes reflect a sensory journey through memories of childhood and the essence of Korea's seasonal landscapes. Chef Louis Han employs a distinctive style that transforms personal memories into culinary narratives, creating a gastronomic experience that transcends taste and evokes emotion.

ARVA, which means “harvest” in Latin, embodies the Italian culinary philosophy of "Cucina del Raccolto", emphasizing the beauty of seasonal ingredients sourced from the land. The restaurant showcases the rich offerings from Japan's mountains and seas while delivering simple yet deeply flavorful dishes rooted in Italian tradition. The course begins with an amuse-bouche featuring caviar sourced from Kagawa Prefecture paired with a tartare of sea bass, infused with hints of fermentation. Following this is a cold cucumber soup named "Oinenguk", which evokes summer memories of Korea. The warm appetizer presents a confit of Fuji white salmon accompanied by white asparagus, creating a soft harmony. The main pasta dish, a blend of sea urchin from Hokkaido and bottarga from Mie Prefecture, is enriched with morel dumplings, delivering a delightful medley of flavors.

For the main course, guests will savor a seafood dish featuring Korean-style broth in "Brodetto of Seafood".
