Ajinomoto AGF, led by President Kenji Shimamoto, is continuing its support for the 1st Crack Coffee Challenge (1CCC) as an official sponsor in 2025, providing scientific aroma analysis through gas chromatography. This initiative aligns with their mission to contribute to the health of both mind and body.

About the 1st Crack Coffee Challenge



Launched in 2022 by Giesen Japan, this competition aims to discover and nurture young roasters. Unlike other coffee competitions that focus solely on creating delicious brews, 1CCC challenges participants to roast beans with specific flavor profiles in mind. This unique approach to coffee roasting sets 1CCC apart from other events in the industry.

Since 2022, Ajinomoto AGF has been proud to support this endeavor, leveraging its expertise in aroma analysis. Beginning in 2023, the company has implemented gas chromatography during the qualifying rounds, enhancing the evaluation process.

In addition to its analytical contributions, Ajinomoto AGF showcased its upcycling initiatives at its booth, introducing powdered beverages aimed at commercial customers, along with “Aroma Loop,” an innovative product made from discarded coffee grounds.

Furthermore, the competition evolved this year by introducing a latte art challenge, making the event accessible and enjoyable for anyone, not just industry specialists.

By supporting the 1CCC, Ajinomoto AGF underscores its commitment to empowering young roasting talents, aiming to invigorate the coffee industry as a whole. Their involvement also illustrates a commitment to sustainable practices within the sector, especially through initiatives like Aroma Loop, which transforms waste into eco-friendly products.

1st Crack Coffee Challenge 2025 Details


  • - Preliminary Rounds:
- 1st Round: July 11, 2025 – Infrared analysis and roast color evaluation
- 2nd Round: Early August 2025 – Analysis supported by Ajinomoto AGF technology
- 3rd Round: August 15, 2025 – Cupping evaluation by judges
  • - Finals: September 13, 2025 – Presentations by finalists

Evaluation Method


During the preliminary rounds, Ajinomoto AGF applies scientific techniques such as gas chromatography to conduct objective evaluations based on numerical data, followed by sensory evaluations from a panel of judges. In the finals, contestants will present their interpretations of “the current and future of coffee.”

The champion of 2025 is Daichi Sakaki, who will be recognized for his outstanding skills in both roasting and presentation.
