This month, we are excited to introduce the limited edition "Kurikiwa Waguri Dorayaki", a treat crafted for chestnut lovers, featuring a delightful combination of flavors that provides an indulgent experience from the first bite to the last.

The "Kurikiwa Waguri Dorayaki" showcases three distinct representations of the chestnut: a smooth white bean paste, a gentle-flavored domestic chestnut puree, and a whole, robust chestnut coated in its tangy skin. These elements combine to create a satisfying dessert that captivates the palate with every bite, balancing a velvety filling, sweet aroma, and tender texture.

The white bean paste is carefully prepared and then combined with the domestic chestnut puree before being artfully mixed with a whole, sizeable chestnut. Each dorayaki is then sandwiched between soft and fluffy pancake skins, expertly crafted by our skilled artisans who hand-cook them daily. The rich aroma and gentle sweetness of the chestnuts are beautifully showcased in this exquisite creation.

Among these, the "Kurikiwa Waguri Dorayaki" is part of our commitment to creating the most delicious dorayaki in Japan. Our philosophy marries traditional Japanese confectionery techniques with elements of Western pastry-making to create something extraordinary. Here are the four commitments that define our dorayaki:

1. Copper Plate Grilling: Each morning, we hand-cook our dorayaki on copper plates, ensuring that we focus profoundly on the quality and handmade nature of our sweets.
2. Meringue Batter: By separating egg yolks and whites and whipping the egg whites into meringue, we achieve a fluffy pancake skin that’s airy and satisfying.
3. New Proportions: While maintaining the traditional equal ratio of egg, flour, and sugar known as "San-do-wari", we’ve developed a unique new balance after countless trials to create a "New San-do-wari" golden ratio.
4. Salted Red Bean Paste: Utilizing azuki beans from Tokachi, Hokkaido, we create a subtly sweet bean paste with a hint of salt. This enhances the texture and flavor for an exquisite experience.

Our dorayaki honors the tradition of this beloved Japanese dessert while infusing it with the essence of Western sweets, providing uniquely crafted, lesser-sweet, fluffy dorayaki made with carefully selected domestic ingredients.
