Starting June 2, 2026, Shangri-La Tokyo introduces a special summer dinner course at its Italian restaurant, Piacere, located on the 28th floor. The new menu draws inspiration from the famed literary work, "The Pillow Book" by Sei Shonagon, specifically the evocative phrase "Summer is night." This dinner experience promises a refreshing and poetic ambiance, reminiscent of summer nights filled with fireflies, moonlight, and rain, all while utilizing high-quality domestic ingredients.
The dining journey begins with an amuse-bouche inspired by a serene garden. The dish presents Hayama eggs nestled in a shell, enhanced with Hokkaido uni and brioche croutons, all harmoniously balanced with a light mascarpone foam and garnished with seaweed.
Continuing with the appetizer, guests can savor marinated sardines adorned with fresh herbs and colorful gnocchi, evoking the essence of pesto, and a stunning main course of toro (fatty tuna) carpaccio accompanied by a warm quail egg reminiscent of the moon, complemented by the depth of wasabi.
Next is the lasagna, characterized by rich layers of Bolognese sauce, mozzarella, marinated cherry tomatoes, and homemade pasta topped delicately with Yokohama beef, delivering a deeply satisfying flavor. The grilled eel course features perfectly crisp snow camellia chips and watercress, with a delicate sauce drizzled atop, reminiscent of the soft sounds of summer rain.
For the grand finale, indulge in Milanese-style pork cutlet, encrusted with a blend of Parmigiano cheese, breadcrumbs, black olives, and mustard, served elegantly on a plate with Amatriciana sauce and crowned with luxurious Miyazaki caviar. The dessert, named “Night Flower,” presents a black vacherin crested with rich Kamakura chocolate cream and cherry compote, complemented by a scoop of black beer ice cream, showcasing visually appealing and aromatic features as finishing touches.
