This program features ten carefully selected types of sake, including the rare Jikon, for a remarkable price of 3,000 JPY (tax included).

Fuyo is managed by beagle Inc., under the leadership of CEO Masamaro Hanamitsu, with a philosophy that emphasizes creating the future of food. The restaurant’s chef, Kuto Sugimori, aspires to share an extraordinary dining experience where the perfect pairing of beautifully crafted dishes and exquisite sake can be enjoyed without hesitation. This is Fuyo's first special initiative, created by Chef Sugimori's passion for providing an unrestrained gastronomic adventure.

This remarkable free-flow sake program not only highlights the flavors of the sake but also emphasizes the harmony of the food, elevating the delicate tastes of seasonal ingredients through the umami of Fuyo’s signature dashi (broth).

Meet Chef Kuto Sugimori


Hailing from Mie Prefecture, Chef Sugimori began his culinary journey at the Mie Prefectural Oka High School, renowned for its food and cooking program. After a stint at a French restaurant in Yokkaichi, he honed his skills in French cuisine's intricacies, focusing on ingredient combination, presentation, and layered flavors.

However, the world of Japanese cuisine captured his heart, leading him to refine traditional skills in dashi-making and the treatment of seasonal ingredients. By the age of 22, he was appointed as the head chef of Fuyo, where his repertoire combines the essence of traditional Japanese cooking with the creativity of French culinary arts.

At Fuyo, patrons can enjoy a variety of dishes that reflect the freshness of seasonal ingredients, including sashimi and unique creations such as the signature crab tamago sandwich and freshly steamed rice. Each dish tells a story and resonates with guests, thanks to the carefully sourced sake selections, primarily from his homeland in Mie.
