Mochimen Udon Shinagawa Konan-guchi: A New Culinary Experience
Mochimen Udon is thrilled to announce the grand opening of its latest restaurant, located a mere five minutes from Shinagawa Station’s Konan Exit. This new eatery, opening on September 2, 2025, brings a unique culinary twist to the traditional Japanese noodle experience, specifically udon. With its innovative “chewy gummy texture,” Mochimen aims to redefine how udon is perceived and enjoyed.
The Unique Chewy Gummy Texture of Mochimen Udon
The standout feature of Mochimen Udon lies in its specially crafted noodles made from two varieties of domestically-produced wheat. Unlike anything found in traditional Sanuki or Ise Udon, these noodles are meticulously aged to create a unique mouthfeel. Diners will encounter a slippery texture that leads to a delightful chewy sensation, reminiscent of gummy candies. This breakthrough in noodle texture allows for both an exciting taste experience and a comforting familiarity that udon lovers cherish.
Dashi and Ingredients: A Commitment to Quality
At Mochimen Udon, the focus extends beyond just the noodles. The restaurant prides itself on its aromatic “golden dashi,” which is crafted through an elaborate process of steeping kelp and iriko (dried baby sardines) and combining them with high-quality bonito, mackerel, and sardine flakes. A unique mix comprising Mikawa mirin, Tanakaya soy sauce from Ehime, and washed brown sugar from Tanegashima enhances the overall flavor profile, ensuring every dish delivers the utmost satisfaction.
A Culinary Delight Featuring Aged Chicken Tempura
A highlight of the Mochimen menu is the aged chicken tempura, which is prepared using domestically-sourced chicken thighs and breast. This chicken is aged for five days, extracting maximum flavor and aroma that is achieved through cutting-edge fermentation techniques. Each bite delivers rich taste and tenderness, making it a perfect pairing with the udon.
