Starting this summer, the town of Kagami-Ishi in Fukushima Prefecture will host the 'Vegetable Life Cafe', a pop-up concept that showcases local produce and promotes the contributions of local farmers. This year, the cafe will be open for an impressive five months, from July 17 through December 20, located in the Kagami-Ishi Health and Welfare Center, HOGARAKAN.

Organized by the Hahpo-en Group, led by President Yoshinori Inoue from Tokyo, this initiative aims to highlight the flavors of Kagami-Ishi through tailored dishes crafted by expert chefs. The project is part of a broader partnership established with Kagami-Ishi Town in March 2021 to invigorate regional branding and community engagement.

The collaboration is designed not only to tantalize the taste buds but also to boost awareness about agriculture in the area. There is a strong vision to inspire new farmers to venture into agriculture and to foster a sense of pride in local produce. The concept is built on meaningful engagement with farmers and the community, striving to increase the overall foot traffic and interactions in the area.

The Culinary Experience


This year's cafe will roll out a versatile menu that changes according to seasonal ingredients, allowing visitors to experience the unique flavors of Kagami-Ishi at different times throughout the year. Menu items will include juicy peaches, sweet corn, and other seasonal produce, with dishes creatively crafted by chefs from Hahpo-en in collaboration with local vendors.

For instance, special dishes such as Creamy Butter Chicken Curry with Pickles made from the local Iwase cucumbers will delight diners during lunch hours, alongside tasty offerings like Fried Whitefish with Kagami-Ishi Corn Tartare and the signature Handcrafted Hamburg served with a delightful demi-glace sauce.
